The Austrian three-tier quality pyramid

The Austrian three -tier quality pyramid was created in order to clarify the various categories of Sekt (sparkling wine) with “Protected Designation of Origin” to consumers. According to the legal guidelines of the top category of the Pyramid, regulations adhere to the highest production standards of the global leaders in sparkling wine production, such as Champagne or even Franciacorta, and even go well beyond these standards in many cases.

Should Sekt producers wish to designate their sparkling wines with “Austrian Sekt with Protected Designation of Origin” (PDO) in the categories of “Klassik” or “Reserve” or “Grosse Reserve” on their labels, they are legally obligated to adhere to these according quality standards. A Federal Agency for Wine Production and the Federal Agency for Wine Cellar Inspection oversees adherence to these regulations.

Tiers of the Austrian quality pyramid

 

Tier 1 - Austrian Sekt "KLASSIK"

 

  • grapes harvested in one single county 
  • entire grape and wine production process must take place within Austria
  • minimum 9 months maturation on the lees regardless of the production methods; 
  • cannot be released to the consumer before the 22nd of October of the following year
  • all methods suitable for sparkling wine production are allowed. 
  • Schlumberger only uses “Méthode Traditionnelle”
  • maximum alcohol content of max. 12.5 % 
  • the indication of origin more specific than the county is prohibited

 

 

 

Tier 2 - Austrian Sekt "RESERVE"

 

  • grapes harvested in one county 
  • harvest and pressing (maximum yield of juice extraction capped at 60 %)
  • grapes must be harvested by hand – including a maximum stacking of 35cm in crates. 
  • whole cluster pressing
  • minimum of 18 months aging on the lees
  • Maximum Dosage at 12g/l (brut)
  • only bottle fermentation – no other methods of sparkling wine production
  • released to consumers not before the 22 October of the following year
  • the indication of origin more specific than the county is prohibited

 

 

 

Tier 3 - Austrian Sekt "GRANDE RESERVE"

 

  • All grapes exclusively from one municipality.
  • Grapes must be harvested by hand and pressed within the same municipality of harvest. 
  • Only basket press or pneumatic press permitted. 
  • Whole cluster pressing.
  • Minimum maturation on fine lees of 30 months.
  • Maximum Dosage at 12g/l (brut). 
  • Only Methode Traditionnelle – no other method of sparkling wine production.
  • Maximum yield of juice extraction capped at 50 %
  • The indication of origin more specific than the county, for example a single vineyard, is permitted.
